Tradition of canning on the table
CANNED FISH
Candás has been a canning village since the 19th century. The salting and marinating cellars, which had been operating in the villa since the Modern Age, exported their products to Castile-La Mancha, Extremadura and Andalusia, where they were highly appreciated.
Bonito, anchovy and sardine
Albacore, also known as albacore tuna, is a summer product: it is only caught in the coastal season, from June to September. It is preserved in the form of loins, ventresca pieces and crumbs, both in oil and in marc. The most coveted part is the window.
Anchovy arrived around 1920, when the crisis in the Mediterranean fishing grounds pushed Italians to search in the Cantabrian Sea for the carton to make the fillets. It was they who introduced this semi-preserved product to Candás.
The Conservative Fair
In July, Candás celebrates its Conservative Fair.
The history of the factories and the people who worked in them can be found in The canning industry.
